Lemony Bean and Shrimp Stew

Ingredients
- 1 teaspoon of fresh lemon zest
- 2 tablespoons of lemon juice
- 1 tsp of smoked paprika
- 2 cloves of minced garlic
- 1 lbs of peeled, deveined shrimp
- 1 shallot, thinly sliced
- 1 tbsp ghee
- 2 tbsp olive oil
- 1 can of white beans
- 2 cups of chicken or vegetable stock
- 2 tablespoons chopped fresh parsley
Directions
- Step 1 1. Combine lemon zest, juice, paprika, garlic and shrimp to a bowl. Toss to coat the shrimp.
- Step 2 2. In a large pan, add ghee & olive oil over medium heat. When the butter begins to foam, add in the shrimp and cook until pink. Remove using a slotted spoon and set aside.
- Step 3 3. Add shallots to the pan and cook until soft. Add beans and chicken broth and bring to a boil. Lower heat and simmer for about 10 minutes so the flavours meld.
- Step 4 4. Add the reserved shrimp back in and squeeze over fresh lemon juice for the citrusy kick. Finish with a sprinkle of parsley.
- Step 5 It’s simple, comforting and full of flavour. Ready in under half an hour.
