This simple yet elegant Fish Florentine, with seared white fish and creamy spinach,

Ingredients
- 4 - 5 oz thick pieces of skinless white firm fish fillet , (such as cod or halibut)
- 1 tablespoons extra virgin olive oil
- 1 tablespoon salted butter or ghee
- 1 cup red bell pepper, thinly sliced
- 2 cloves garlic minced
- 8-9 cups fresh baby spinach, from two bags
- 2 tbsp of low fat cream cheese or Boursin cheese
- ¼ cup almond milk
- kosher salt and fresh black pepper
- Garnishes:
- 4 tsp fresh parsley
- 4 lemon wedges
Directions
- Step 1 1. In a large skillet over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter/ghee, red bell pepper and garlic and cook for about 4 minutes.
- Step 2 2. Add spinach season with a pinch of salt and pepper mix until the spinach wilts down.
- Step 3 3. Add cream cheese or Boursin cheese, almond milk and mix well on low heat until the ingredients blend together and resembles creamed spinach.
- Step 4 2. Heat a separate skillet on medium high heat, add remaining oil and butter.
- Step 5 3. Season fish on both sides with salt and pepper and place on the hot pan. Cook for 6 minutes on one side and then flip the fish over and cook on the other side for an additional 5 minutes, until cooked through and browned.
- Step 6 4. Divide the spinach mixture on the bottom of each plate and top with piece of fish. Garnish with fresh parsley and a lemon wedge.
