Keto Pancakes

These keto pancakes are extra thick and f luffy; no grains and no sugar needed, they’re quick and easy to make! Loaded with healthy fats and only 3 grams net carbs per serving.
Ingredients
- 2 eggs
- 1/3 cup unsweetened dairy free milk
- 1 tbsp olive oil, melted coconut oil or melted ghee
- 1/2 tbsp sugar free maple syrup
- 1 tsp vanilla extract
- 1/4 tsp almond extract (optional, but
- recommended for yummy flavour!)
- 1 1/4 cup almond flour (do not use almond meal)
- 1/4 tsp baking soda (or substitute 1 tsp
- aluminum-free baking powder)
- 1/4 tsp salt
Directions
- Step 1 1. In large bowl, whisk together the eggs, milk, oil, maple syrup, vanilla and almond extract together until
- Step 2 smooth and well combined. Next, add in almond flour, baking soda and a pinch of salt
- Step 3 stir with spoon until
- Step 4 well combined.
- Step 5 2. Lightly coat a large nonstick skillet with butter or coconut oil and place over medium heat. Once oil or butter
- Step 6 is hot, drop about 1/4 cup of batter onto the skillet. It‘s important to cook until bubbles appear on top and the
- Step 7 edges are well cooked. Flip and watch that both sides are golden brown. I usually start on medium heat and
- Step 8 reduce to low as the skillet gets hot and you don’t want them to burn!
- Step 9 3. Top with sugar free syrup, a drizzle of warm ghee and fruit (fruit will add minimal carbs) – enjoy the best keto pancakes you’ll ever taste!
